  • Like all of our products, we use only the best available. Made by Mulino Caputo in Naples, Italy Fioreglut is the best Gluten Free Flour on the market because it uses deglutinized wheat starch ( Continuously tested under 5PPM of Gluten, 4x under the FDA limits for Gluten Free Certification) and a blend of cereals to make a flour that can be mixed, fermented, stretched and cooked just like a traditional Pizza Dough.

    WHAT ARE THE INGREDIENTS IN OUR GLUTEN FREE DOUGH?

    Mulino Caputo Fioreglut Flour, Water, Salt, Yeast, Olive oil. That’s it!

    Each batch of our gluten free Sicilian pizza dough is mixed in dedicated equipment, then allowed to rise and ferment over 24 hours for outstanding flavor and incredible structure! The results: a flavorful, chewy crust with great rise just as a Sicilian Pizza should be, but safe for Gluten Free Guests. 

    *Since Fioreglut is a flour using deglutinized wheat starch, it is not appropriate for those with a wheat allergy. 

  • A even a great gluten-free item can be ruined if it comes into contact with traditional flour. We have protocols at every step of prep and production to keep our Gluten Free pizza free from contamination.

    • We never use shared equipment, like dough mixers, proofing trays, pans or pizza cutters.

    • We never use the same toppings for Gluten Free pizza.

    • We never prep Gluten Free dough in the same area our traditional is processed. 

    • We bake Gluten Free pizza in separate pans, and never on the deck of the oven where traditional pizzas are baked.

    • We make it a policy for kitchen staff to change gloves, wash hands, and maintain clean surfaces between orders. 

    • EVERY Gluten Free To-go Item must be labeled clearly.

  • We knew early on in the development of Dough Counter that we wanted to make great, craveable chicken strips and we wanted to make them exclusively gluten free. This means there is no version of our Chicken Strips that are an “afterthought” or a lesser version. There are only savory, crispy, moist chicken strips for everyone! 

    Dough Counter Chicken Strips are hand-cut and hand-battered chicken breast meat. We brine our chicken overnight, and dredged to order in buttermilk and seasoned rice flour. 

    Our Fryers are dedicated gluten free. We offer several house-made dipping sauces, and those containing gluten ingredients are always labeled. 

    • We always Repeat Orders back to the guest.

    • We announce which items are GLUTEN FREE when delivering items to the table.

    • We provide an item description and allergens for all items online. 

    While there is never a way to prevent 100% of glutinous flour particles from coming into contact, we take preventing cross-contamination SERIOUSLY.
